C'est le 6 octobre 1889 que le Moulin Rouge ouvre ses portes sous le nom du Premier Palais des femmes. Joseph Oller et Charles Zidler, ses fondateurs, profitent de cette période de légèreté et d'insousciance pour offrir au tout Paris un cabaret digne de ce nom. Une piste de danse immense accueille une armée de danseuses aux corps élastiques, des murs de miroirs flattent le regard des spectateurs, un éléphant se promène dans le jardin. La fête est de rigueur. Ici, au pied de la Butte Montmartre, sur la Place Blanche, le Music-Hall a son temple. Le peintre Toulouse-Lautrec immortalise en 1891 le french-cancan et son Moulin Rouge avec La Goulue. Désormais, les parisiens ont laissé la place aux touristes qui consomment un dîner-spectacle onéreux. L'éléphant a disparu, et le brin de folie aussi.
